Fresh and rejuvenating: Apple tea
Ingredients:
1/3 cup black tea leaves
1 + 1 litre water
Sugar, according to taste
1 apple
1 stick cinnamon
Method:
Boil one litre of the water in a large vessel.
Wash, seed and chop the apple, roughly into one centimeter cubes. Ensure you leave the skin on.
Put the apple pieces into the boiling water and cook it for 10 to 12 minutes, until the apples are tender.
Add cinnamon stick to the boiling apple water, and leave it on the heat for another five to seven minutes.
Once done, strain the tea and add the sugar and serve it hot or cold.
The apple tea can be refrigerated for up to three days.
TIP: You can use cloves instead of the cinnamon, or even both.
Smooth and delicious: Apple butter
Ingredients:
5 kg apples
4 cups sugar
3 cups apple cider
5 tbsp powdered cinnamon
Method:
Wash the apples, chop them roughly and pressure cook them for three whistles.
Once done, open the lid while the apples are hot, add the sugar and stir continuously.
Pour the apple cider in the mixture and keep stirring.
Place the lid and slow cook it for about an hour. Then on very low heat, cook for 10 to 12 hours, stirring every two hours or so. In the last hour of cooking, add the cinnamon powder.
Once done, cool it completely and blend the mixture until it is smooth. Strain if you find it necessary.
Preserve the apple butter by placing in fruit jars.
